How to air fry salmon

    Pat the fillet dry

    Blot the surface with a paper towel so it browns instead of steaming in the basket.

    Season simply

    Rub with oil, salt, and pepper, or brush with a thin glaze — thick, sugary glazes are better added later.

    Set the fillet skin-side down in the basket; the skin protects the flesh and crisps on its own.

    Cook for 7–9 minutes without flipping — salmon cooks fast and flipping risks breaking the fillet apart.

Fresh vs. frozen

Frozen salmon fillets can go straight into the air fryer without thawing — just add about 5 to 7 extra minutes. Cook at the same 400°F (205°C) for roughly 12–14 minutes, skin-side down, and hold off on seasoning the surface until the last few minutes, since it won't stick well to a still-frozen fillet.

Doneness and safety

Salmon is safe at 145°F (63°C) measured at the thickest part, and the flesh should flake easily with a fork. If you prefer a slightly translucent, medium center, that's a personal preference — 145°F is the FDA's recommended minimum for food safety.

Common salmon mistakes

  • Flipping the fillet, which breaks the skin and lets moisture leak out — leave it skin-side down the whole time.
  • Cooking past 145°F, which turns naturally fatty salmon dry and chalky.
  • Skipping the pat-dry step, which stops the top surface from browning.
  • Applying a thick, sugary glaze too early — sugar burns before the fish finishes cooking. Brush it on in the last minute instead.
  • Cooking straight from the fridge without letting the chill off for about 10 minutes, which can lead to uneven cooking.

Yes, without thawing. Cook at the same 400°F (205°C) but for about 12–14 minutes instead of 7–9, still skin-side down.

How do I know when salmon is done without a thermometer?
